Ingredients
1 bag (10 oz) cauliflower florets
1 pkg (16 oz) potato gnocchi
6 tbsp butter, divided
1 tbsp lemon juice
Grated Parmesan cheese, for serving
Directions
  1. Cut cauliflower florets in half. Add to a 12-inch nonstick skillet over medium-high heat. Add ½ cup water and heat until it comes to a boil. Cover and continue cooking 2-3 minutes until cauliflower is still crispy, but slightly tender. Drain and set aside.
  2. Wipe out skillet, then add 2 tablespoons butter over medium-high heat. Add gnocchi and cook, covered and undisturbed, until golden brown, 2-4 minutes. Turn gnocchi and brown the other sides. Transfer to a plate.
  3. Add remaining 4 tablespoons butter and cauliflower to the skillet; cook, stirring until butter is golden and smells nutty, and cauliflower is browned, 5-8 minutes. Add gnocchi, season to taste. Stir in lemon juice and served with grated Parmesan.
